Ice cream but make it healthy. π #CottageCheese is making its way into so many recipes lately (as it well should) however I was honestly skeptical about this recipe... I`m excited to report it ended up being a home run!
A couple tips/recommendations:
- If you want a creamier (less "icy") consistency, use less strawberries.
- The ice cream was a little too hard to scoop straight out of the freezer so let it thaw on the counter for 10 minutes or so before serving.
- Feel free to add more honey if you like it sweeter but two tablespoons was perfect for me.
